No matter how many meatloaf recipes come along (and there are plenty!) this remains our favorite.
5 tablespoons ketchup, divided
2 tablespoons prepared yellow mustard
½ cup dry bread crumbs
2 tablespoons dry onion soup mix
¼ teaspoon pepper
¼ teaspoon salt
1 pound ground beef
¼ cup sugar
2 tablespoons brown sugar
2 tablespoons cider vinegar
In a bowl, lightly beat the egg. Add mustard, bread crumbs, dry soup mix, salt, pepper, and 2 tablespoons of the ketchup. Crumble beef over mixture and mix well. Shape into an oval and place into a loaf pan. In a bowl, combine the sugars, vinegar and remaining 3 tablespoons of ketchup. Pour over meatloaf. Bake at 350 degrees for 45-60 minutes (or until desired doneness).
Try with: Potato Chip Potatoes (since they cook for the same amount of time at the same temperature!)
