This is one of my very favorite chicken dishes. It’s perfect for the grill, but can be cooked on a grill pan on the stove top if your outdoor grill is snowed in! Plan ahead, it needs to marinate at least overnight.
6 boneless, skinless chicken breasts (not previously frozen. See note.)
1/2 cup lemonade concentrate
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons lemon juice
1/2 teaspoon thyme
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper (optional … I skip it)
Place chicken breasts in a large zippered freezer bag. Add all remaining ingredients to bag with chicken. Squeeze out air, zip up, and mush around so that the marinade is well mixed and meshed with the chicken. Place into freezer at least overnight (I’ve kept it in there for up to six months). When ready to cook, thaw completely. Preheat grill or grill pan to medium high heat. Place chicken on grill (discard marinade). Grill 5-7 minutes per side.
- Use fresh (never frozen) chicken since you’ll be freezing it before cooking. You don’t want to re-freeze chicken that has previously been frozen.
- If I can find a “family sized” package of chicken breasts on sale I sometimes make three or four bags of this at a time, four breasts per bag, then thaw them as we get hungry for them. Which is often.
