I rediscovered this recipe on an old computer after not making it for almost 10 years. I’m so glad I re-tried it … I remembered immediately why we loved it. It doesn’t look very glamorous, but tastes fantastic and it’s super easy!
Ingredients
2 pounds boneless chicken breasts
1 envelope onion soup mix
1/2 cup ketchup
1/4 cup brown sugar
1/4 cup water
Directions
Cut chicken into chunks (if desired). Arrange chicken in a shallow baking dish in a single layer. Set aside. In a small bowl, combine remaining ingredients. Pour over chicken. Cover baking dish tightly with aluminum foil. Bake at 375 degrees for 50 minutes.
Notes
- You can use bone-in chicken if you prefer, up to three pounds.
- The sauce is very thin. It’s great over rice.
- I made Vegetable Casserole as a side dish, bakes almost the same amount of time at the same temperature. Put the chicken in the oven then assemble the casserole and toss it in too!
